Craig had a dream last night that it was my birthday, and carryaway was a seamstress for a living and had sewn me a whimsical spanish hoop dress with lots of glitter for my birthday and I was giggling with glee and spinning and delighted with it!

What a wonderful dream. Here's hoping for some more good dreams.

In real life friend appreciation, christabel walked me through making a meatloaf last night that was SO good. I have a photo, so I'm going to phost and show you the recipe soon. It was easy, healthy, and GOOOD!

Ok, here's the meatloaf.


1 sweet onion
1/2 orange bell pepper
3 stalks celery
3 green onions
some fresh parsley
1 cup italian bread crumbs
2 eggs
1lb ground pork
1lb ground beef

Preheat oven to 400 degrees
Cut all veggies very very small.
Mix veggies with meat, eggs and breadcrumbs. Add all spices, mix, and shove into a loaf pan.
Cook until it is no longer pink, then spread ketchup on the top of it and bake about 15 minutes more.

This is really really tasty and I know it may not look like the best meatloaf ever, but it's filling and good for lots of fiber and protein, although it isn't low in salt.

oh that looks yummy...I love me a good meat loaf.

Little trick I learned - use a foil loaf pan with holes poked in it and then place it in the regular loaf pan. As it cooks, the fat drips through the holes into the other pan saving your meat loaf from floating in fat =)

Wow! Great plan. I'll start looking for the foil loaf pans on sale. Sometimes they get stuff like that in at Big Lots and it's less than half price.

Yum! The other night Mason made mini-meatloaves. Those are totally handy because they're a perfect serving size for us and we could freeze the leftovers individually!

This veggie heavy meatloaf is YUM. I recommend it, but next time I'm going to try the fat drain method with the holey foil pan.

Meatloaf a la christabel is the best meatloaf ever! Although I have her recipe and I've made it and it was good, it just wasn't as good as when she made it. Must be the extra love. *grins*
