UPDATE: OMG-Bel just IMed me her lower calorie version of Chicken Pot Pie casserole and I have all of the ingredients. Yum. I still love the Chicken N Dumplings idea too! I may make that when I have a bit more chicken. I think it would be best when I can boil an entire chicken, so I have the light and dark meat.
I need to use some leftovers, especially my chicken breasts. I was thinking about making some sort of chicken soup. How can I spice it up? I've got onion, garlic, carrots, potatos, celery, chicken, cheese, eggs, and brocolli as well as a few other strange things. I'm lost as to what would make a good fall meal here.
