Kitty! [Sep. 30th, 2007|02:22 pm]
[Current Mood |relievedrelieved]

He is not only eating and drinking, but even wanted to play, was meowing and trying to get outside, and climbed up on Craig's lap purring. We think he's going to make it!! He's not all the way better, but this afternoon we have our kitty back. Thanks for all of the kind wishes and words. Now I'm just hoping the test results tomorrow come back ok.

Now, to share the comfort food American Shepard's Pie recipe I made last night. It is pretty hearty, but we both we so upset we hadn't eaten much all day. I didn't make any side dishes with it and we both were really full from a serving of it.

1lb Leanest Ground Beef
1 clove minced garlic or equal roasted garlic from a jar
Salt and pepper to taste
1/2 large onion chopped
1 can green beans
1 can Cream of Mushroom Soup
4 cups prepared Instant mashed potatos
1 cup shredded cheddar

Brown ground beef with onions, salt, pepper, and garlic.
Drain and mix in a square casserole dish (Any dish around 8"x8" would work) with green beans and cream of mushroom soup
Top with prepared Mashed Potatos and put on all shredded cheese
Cook at 350 degrees F for about 30 minutes, or until the cheese is browned on the top.
For those who are carb sensitive, you could make Mock Mashed potatos using Califlour and I think it would still be really tasty. You also can use way less mashed potatos (I normally would, but this meal was for Craig too, so I just grabbed more of the meat).

Makes 8 servings (very filling servings)
Per serving 324 calories 17g pro

That's great news. Sounds like he's out of the woods. :) Sounds like you have a pretty resilliant kitty there.

Good for Midnight, and good for you and Craig for being so attentive.

That recipe sounds really yummy!

I am soooo happy that Midnight feels better. I think that I hate hearing about ailing kitties even more so than people! Just call me "kitty mama" ">)

And your recipe looks yummy - I LOVE Shepherd's Pie!

I make that on a regular basis, but I add a can of water chestnuts. Adds a delicious crunch without changing the flavors.

Yum! I'll have to try that next time. I'm going to try it with some lighter cheese to see if I can get the calorie count down a bit, and I bet waterchestnuts can help with that as well. I wonder how it would be with adding some celery?
