I have a few ingredients here and the meat I have is boneless skinless chicken breast pieces. I do best if it isn't dry and have an awesome oven, great pans, extensive spices, and a few basics like butter, some olive oil, ect, and a few frozen veggies but nothing fresh just yet (we are just setting up the house). Any suggestions on what I can make? I'm looking to add moisture and flavor, but it has to be reasonably healthy.

quick and easy

Cook 2 cups of rice about 3/4 of the way cooked(your choice of type)
start baking chicken in a pan with some water while the rice cooks

remove chicken from baking pan
pour rice in the baking pan
pour cream of chicken soup over the chicken and rice

bake until everything is done, you can add peas to the rice when you put it in the pan. if it starts to dry add a little water and cover to finish baking.

you do have to find the low fat stuff and count the carbs and starch in your rice and soup.

I have heard of someone using a low fat, low sodium chicken broth instead of the soup also.
