Yum Lunch [Oct. 2nd, 2008|02:01 pm]

I had a grilled veggie and hummus wrap. Sounds not good, but they put artichoke hearts, roasted red peppers and asparagus with onions in it. The side dish was barley, craisins, and crushed mint salad. Sounds bizarre, but I loved it! A+++++ Would eat again.

Note to self-Find grain that starts with a Q and consider making a grain salad with craisins. Oh so good.

That sounds delish!

Quinoa is the grain you're looking for. I've found it at Kroger and WalMart, but the best deal I found was actually at Whole Foods. They have their own 360 Organics brand and had it in bags near the pasta and rice.

Oh, I should say it was for $2.99 a bag and was the size of an average bag of rice or beans.

Yum yum yum! They said it's good if you soak it in apple cider vinegar mixed with orange juice.

I haven't tried that. It does sound very good that way. I usually use it like rice, My hubby makes shrimp etouffee and we serve it over quinoa instead of rice.

I need to get back in the habit of going to TJ's. We went to the Whole Foods because it's a special store (used to be a farmers market) and we wanted ot check it out, but TJ's always has better prices.

Veggies are so good grilled. Didn't realize how much I'd miss them until the first 8 months after WLS when it hurt too much to eat them.

Sounds absolutely delicious! I love wraps and sandwiches with hummus and loaded with veggies. I really like to pair it with thinly sliced cucumbers, red onion and tomato.

I love quinoa and make it often. I have a recipe for Quinoa with carmelized onions (and maybe leeks? I can't remember right now) that I'd be happy to share with you, if you'd like.

My 2-year-old has a $6 a week hummus habit. You give him a carrot he says, "Where's my thomas?" (which is 2-year-old for hummus) With veggies and hummus, you really can't go wrong!
