UPDATE: OMG-Bel just IMed me her lower calorie version of Chicken Pot Pie casserole and I have all of the ingredients. Yum. I still love the Chicken N Dumplings idea too! I may make that when I have a bit more chicken. I think it would be best when I can boil an entire chicken, so I have the light and dark meat.

I need to use some leftovers, especially my chicken breasts. I was thinking about making some sort of chicken soup. How can I spice it up? I've got onion, garlic, carrots, potatos, celery, chicken, cheese, eggs, and brocolli as well as a few other strange things. I'm lost as to what would make a good fall meal here.

I just use chicken, celery (including some of the greens chopped up), carrots, a little fresh garlic and sometimes onion. And a sturdy noodle of some kind.

Chicken & Dumplings! I have a WW recipe for this, at home sadly. I wouldn't add in the cheese and eggs, but throw herbs in with everything else, and in the last half hour or so add in the dumpling batter.

Yum. I look up a recipe online and see if I can find it. Sometimes the WW recipes have a way of ending up online. ;)

It's probably comparable, the recipe I use is from their fussy gourmet cookbook they did with the Culinary Institute of America, so doesn't use baking mix.

And I like to add Rosemary, Thyme, Sage and Tarragon to things when I'm cooking chicken. :)

How about tortilla soup? (I don't have a favorite recipe hand but there are a million out there, and you can tailor it for calories depending on how much cheese/tortilla strips/avocado you add to your dish.)

Ok, the recipe is kind of like this, but she has her own special touches. You can up the veggies, use fresh, and also they make a lower calorie bisquick now.
